Health benefits of honey

There is nothing better than good local honey for you and your kids.  Many people eat honey to build tolerances to pollen that cause allergies and hayfever problems.  It contains about the same level of plaque-fighting antioxidants as the leafy green stuff. And according to research presented at the national meeting of the American Chemical Society, the world's largest scientific society, the range of antioxidants in honey is comparable to that in apples, bananas, oranges and strawberries.  Antioxidants cleanse the body of the free radicals that contribute to serious illness.  In ancient times, Honey was used as a wound dressing, and for skin and hair care treatments; however, it is also a wonderful source of energy, and has few calories. Honey is also an excellent carbohydrate source for post-workout muscle recuperation and energy repletion.

Cooking with Honey

For best results, use recipes developed for using honey. When substituting honey for granulated sugar in recipes, begin by substituting honey for up to half of the sugar called for in the recipe. With a little experimentation, honey can replace all the sugar in some recipes.

When baking with honey, remember the following:

  • Reduce any liquid called for by 1/4 cup for each cup of honey used.
  • Add 1/2 teaspoon baking soda for each cup of honey used.
  • Reduce oven temperature by 25°F to prevent over-browning.

Because of its high fructose content, honey has a higher sweetening power than sugar. This means you can use less honey than sugar to achieve the desired sweetness.  Use 1/2 cup of honey for every 1 cup of sugar.

When measuring honey, coat the measuring cup with non-stick cooking spray or vegetable oil before adding the honey. The honey will slide right out.

A 12-ounce jar of honey equals a standard measuring cup.

Recipes

Bee Sweet Bananna Bread

1/2 

cup honey

1/3 

cup butter or margarine

teaspoon vanilla

eggs

1/2 

cup all-purpose flour

3/4 

cup whole wheat flour

1/2 

cup quick-cooking oats

teaspoon baking powder

1/2 

teaspoon salt

teaspoon ground nutmeg

cup mashed ripe banana

1/2 

cup chopped walnuts

Cream honey and butter in large bowl with electric mixer until fluffy. Beat in vanilla. Add eggs, one at a time, beating well after each addition, Combine dry ingredients in small bowl; add to honey mixture alternately with bananas, blending well. Stir in walnuts. Spoon batter into greased and floured 9x5x3-inch loaf pan.

Bake in preheated 325°F oven 50 to 55 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack 15 minutes. Remove from pan; cool completely on a wire rack.

Golden Cornbread

cups yellow cornmeal

cup whole wheat flour

Tablespoons baking powder

teaspoon salt

cups buttermilk or low-fat yogurt

1/2 

cup butter or margarine, melted

1/2 

cup honey

eggs, beaten

Combine cornmeal, flour, baking powder and salt in large bowl. Combine buttermilk, butter, honey and eggs in separate large bowl. Stir buttermilk mixture into flour mixture just until moistened. Pour into greased 12x8x2-inch baking pan. Bake at 350°F 25 minutes or until golden brown.

When the Bee Stings
Bees are more likely to sting if you move suddenly or run away. Here's what to do if you get stung:

  • Move away from the vicinity if there are other bees around.

  • Remove the stinger as soon as possible. Use your fingernail, the edge of a credit card, or a blunt knife to scrape the stinger off the skin. (Removing the stinger with a tweezers may cause more venom to be released.)

  • Wash the area thoroughly with soap and water, then apply ice or a paste made from baking soda and water to reduce itching and swelling.

    Most reactions to bee stings include slight swelling around the area of the sting, itching, and redness. However, in some cases, individuals may suffer a more severe reaction marked by difficulty breathing or swallowing, headache, or shock. In these rare instances, immediate medical attention and treatment is required.
